10 Years In, Brush Sushi Is Much More Than Omakase

Brush Sushi turns 10 this year, and the Buckhead restaurant isn’t coasting on its omakase reputation. Alongside its Michelin-starred omakase counter, O by Brush, chefs and married couple Jason Liang and ChingYao Wang have built out a broader menu that makes a case for all-day dining. From lunch, brunch, and dinner to live tuna cuttings and an exciting beverage menu that includes creative nonalcoholic drinks, Brush is an Atlanta staple.

What to order

  • The prix fixe menu ($45) is the move for lunch. It’s a pick-your-own three-course experience. Don’t miss the bara chirashi box, a medley of diced fresh fish and tamago with cucumber and soy sauce. 
  • Get any iteration of duck here. The hay-smoked miso duck breast ($58) is savory and tender, served with a duck fat scallion pancake and sweet potato chips. The duck shoyu dry ramen ($28) is another standout.
  • Brush’s dry-aging program remains a draw. Order the chef’s selection of nigiri or sashimi ($36 to $60 for 6 pieces) to taste how the process deepens flavor and adds a subtle, almost funky edge to each bite. 
  • The croissant ($8) showcases Wang’s pastry chops. It is heavily laminated, flaky, and buttery, with a warm, soft interior. Add the truffle and mushroom whipped cream with chive and Gruyere cheese (+$12).

What to drink

  • Try the sake flights. The Grain flight ($45) explores different rice varieties in sake. The Compass flight ($55) takes you through sparkling and aged pours.
  • The Ohmine 3 Grain junmai daiginjo ($24 a glass) is a treasure: delicate and floral; the Dassai Blue 50 Nigori from the brewery in Hyde Park, New York ($12 a glass), is partially filtered with rice bits (sake lees), lending to a creamy texture and an exceptional pairing with spicy, rich and fatty dishes, and even desserts.
  • The Rosebud nonalcoholic cocktail ($15) is floral and refreshing, made with orgeat, rose, lemon, and matcha.
