Roswell’s Truth Be Told, from owner and beverage professional Jonathan Yu and executive chef Matt Marcus, is a rare fine dining addition to the area. Since opening in July 2025, the restaurant has quickly become a destination for polished service and inventive cooking that blends Japanese and French techniques with Mediterranean influences.
What to order
- The four-course tasting menu ($115) is well worth the price, with some indulgent treats for an add-on price. Dishes are also available a la carte.
- The birdcage-tiered amuse bouche kicks off with a sesame seed cracker reminiscent of gajak, an Indian sesame seed and jaggery confection, and moves to tiny gougeres topped with Hot Cheetos dust (it works), and garden-fresh micro carrots and turnips with butter.
- The duck (+$60) is served with seared breast and confit leg with the foot still attached. It’s a medley of textures and fat: the breast is rich and tender, while the leg has a shattering, crispy skin and deeply savory meat that pulls apart.
- The Kiwi Sticky Icky in desserts is the piece de resistance. It’s a playful composition of dried kiwi, fresh basil, and umami gooseberry layered over a creamy kiwi base with shards of crisp meringue. It’s a palate cleanser that should be a complimentary requirement. Don’t you dare skip it.
- Take Yu’s suggestions for wine and allow him to craft a personalized pairing ($55/$150).
The vibe
After valet, guests enter what feels like a historic home, complete with a porch and outdoor fireplaces. The inside opens up to an airy dining room and bar, with a darker nook suited for more intimate meals. The bar fills with patrons noshing on thick slices of bread (a must) and a cocktail, while the tables are reserved for dates and birthday celebrations. The service is elegant and friendly, with Yu (previously with wine distributor RNDC) showing special bottles like trophies: a Sancerre rouge he’s proud of or a stunning amarone that drinks like velvet.
